KOMPAS.com – Amsterdam, ibu kota Belanda merupakan kota dengan beragam daya tarik, mulai dari yang bersifat kuno sampai modern. Salah satu obyek yang kadang lebih terkenal dari Museum Van Gogh ataupun Tour Kanal Rondvart di Amsterdam adalah Red Light District, sebuah kawasan prostitusi.
Red Light District sudah menjadi daya tarik wisatawan mancanegara sejak puluhan tahun silam. Di kawasan ini pula terdapat China Town Amsterdam dan di satu jalannya yaitu jalan Zeedijk, berdiri Kuil Budha terbesar di Eropa bernama Fo Guang Shan He Hua. Kuil ini terlihat menonjol di antara bangunan sekitarnya. Tepat di depan kuil terdapat restoran China yang terbaik dan terlaris di Amsterdam yaitu Restoran Nam Kee China Town.
Restoran Nam Kee sudah berusia 30 tahun dan sejak puluhan tahun sudah dikenal baik di kalangan warga Amsterdam maupun dari kota-kota lain. Hal ini diketahui dari kesan-kesan tertulis pengunjungnya yang berasal dari Belanda dan negara lain sejak beberapa tahun yang lalu.
Semua tulisan menunjukkan apresiasi, pujian, dan rekomendasi kelezatan makanan yang berkualitas dan bercita rasa asli China. Di samping itu, pelayanan restoran ini cukup memuaskan karena penyajian makanan yang cepat dan harga makanan relatif terjangkau. Bahkan diakui beberapa pengunjung sebagai restoran China termurah di Amsterdam dan masih lebih murah jika dibandingkan dengan restoran China di kota lain.
Pada tahun 2011 restoran ini terpilih kembali untuk ketiga kalinya sebagai restoran China terbaik di Amsterdam (The Best Chinese Restaurant) dari Time Out Amsterdam Award. Sedangkan menurut surat kabar The New York Times, restoran ini merupakan “icon of the city” atau ikon Kota Amsterdam.
Pemilik restoran ini bernama Nam Chan, keturunan asli China yang sudah menjadi penduduk Belanda. Pada awal berdirinya di tahun 1981, restoran ini hanya menyediakan 16 kursi. Sampai saat ini restoran hanya menyajikan makanan bercita rasa asli China Cantonese. Sekarang Nam Chan sudah memiliki 3 restoran Nam Kee yang semuanya terletak di Amsterdam. Pertama berdiri di Zeedijk China Town, kedua di Nieuwmarkt, dan ketiga di Heinekenplein.
Restoran pertama yang berada di Zeedijk yaitu di kawasan Red Light District merupakan restoran yang paling terlaris dan terkenal sampai saat ini. Kepopuleran restoran ini didongkrak juga oleh pembuatan buku yang berjudul “The Oyster of Nam Kee” oleh Kees van Bijnum pada tahun 2000 yang dilanjutkan dengan pembuatan film drama layar lebar pada tahun 2002.
Makanan kerang saus kedelai (Oyster of Nam Kee) yang sangat terkenal di Restoran Nam Kee menginspirasi pembuatan buku dan film tersebut. Kepopulerannya terus dipublikasikan oleh berbagai media massa baik cetak dan elektronik. Serta, sudah menjadi buah bibir masyarakat Belanda dari masa ke masa.
Pemilik restoran pun sudah menerbitkan buku masak “The Oysters and Other Dishes” yang berisi resep-resep terbaik dan terpopuler dari restorannya. Restoran kedua dan ketiga lebih banyak diperuntukan untuk memenuhi kebutuhan pengunjung dari kalangan menengah ke atas atau keperluan korporasi karena berkapasitas lebih besar dan modern. Di samping itu, kedua restoran yang lebih besar juga melayani pesanan makanan katering.
Pengunjung Restoran Nam Kee di Zeedijk harus mengantre untuk bisa mendapatkan meja yang kosong saat jam-jam makan padat pengunjung, baik itu hari kerja maupun hari libur. Hal ini saya alami sendiri saat berkunjung pada musim dingin dan musim panas. Setiap tiba di depan restoran, baru di pintu masuk yang kebetulan berukuran kecil sudah mengantre lebih dari 5 orang. Walaupun cuaca dingin atau hujan dan tidak terlihat pengunjung yang mundur dari antrean. Pengunjung bisa terlebih dahulu memesan tempat duduk melalui telepon agar tidak perlu mengantre.
Restoran ini sejak dahulu mempertahankan interior bergaya China dengan furnitur yang sederhana dan ruang masak terletak juga di sisi depan samping pintu masuk. Ruangan restoran tidak terlalu luas. Sekarang mampu menampung kurang lebih 100 kursi. Sekilas terlihat kurang nyaman jika restoran sudah dipenuhi pengunjung karena ruangan terlihat semakin sempit.
Suasana restoran semakin menambah kuat nuansa asli China karena pelayan dan koki berasal dari etnis China, sebagaimana terlihat dari fisiknya dan tidak ada yang berpenampilan etnis barat ataupun keturunan Belanda. Sikap pelayanannya juga sangat kental dengan gaya dari negeri asalnya yang selalu berwajah serius dan hampir tidak pernah tersenyum namun mereka bekerja sangat cekatan serta cepat melayani permintaan pengunjung.
Komunikasi antar pelayan atau koki sering masih menggunakan bahasa China bahkan ada yang tidak bisa berbahasa Inggris ataupun bahasa Belanda. Kesan ini yang memperkuat keaslian restoran China sehingga meninggalkan kesan yang tidak terlupakan bagi pengunjung yang sebagian besar bukan berasal dari etnis China.
Selain rasa makanan yang tetap sama seperti dari tempat asalnya di China, juga suasana restoran memperkuat kesan original China di negeri orang. Tampaknya hal ini yang membuat restoran Nam Kee semakin populer dan laris manis sepanjang masa di negeri orang.
Sebagian besar tamu restoran merupakan pengunjung setia atau langganan karena begitu tiba di restoran mereka langsung menyebutkan makanan yang dipesan tanpa perlu melihat buku menu. Seorang pengunjung setia yang tinggal di Amersfoort, Rose Van der Haven menceritakan kesannya,
“Saya kalau datang ke sini selalu ingin mencoba beberapa jenis makanan tetapi saya sudah punya makanan favorit yaitu Wan Ton Soup yang bisa dimakan sendiri dan sup ini tidak ada tandingannya.”
Menurutnya jika datang ke restoran ini, sebaiknya menikmati beberapa macam menu karena semua makanan enak, namun disajikan dalam porsi besar. Dengan demikian, Rose menyarankan jika makan di restoran ini sebaiknya bersama dengan beberapa orang agar bisa memesan beberapa jenis makanan.
Di restoran ini makanan yang banyak disukai pengunjung adalah Kerang Saus Soya (Oyster Nam Kee), Bebek Peking Panggang (Roasted Peking Duck), Ayam Asam Manis (Sweet and Sour Chicken), Babi Panggang (Roasted Pork), Wan Ton Goreng (semacam pangsit goreng), dan Soup Wan Ton. Termasuk juga beberapa makanan sayur serta seafood, nasi goreng dengan seafood (Nasi Yeung Chow), bakmi, bihun (Bihoen Singapore) dengan racikan bumbu asli resep tradisional China.
Restoran Nam Kee menyediakan kurang lebih 100 menu masakan dengan cita rasa asli China Cantonese. Wan Ton Soup sebagai makanan pembuka yang menjadi favorit pengunjung seakan membuka napsu makan karena rasa kaldu yang pas dan 5 pangsit basah yang segar, bukan dari yang dibekukan di lemari es. Tambahan lagi isian daging bercita rasa tersendiri. Ada juga makanan pembuka lain seperti lumpia goreng kecil dan pangsit goreng (Fried Wan Ton) yang juga banyak dipesan pengunjung.
Lalu lanjutkan dengan makanan utama yang semuanya mempunyai rasa bumbu yang pas. Daging panggang baik dari bebek atau babi, dengan kulit renyah tetapi daging tetap empuk disiram kecap yang kental dan sangat gurih. Begitu pula masakan ayam dibungkus tepung yang renyah disiram saus yang segar, terasa asam manis di lidah.
Nikmatnya mencoba makanan laut berupa lobster berukuran besar dengan isi daging yang banyak serta kerang yang berukuran besar juga. Kedua bahan ini sudah dibumbui dan disiram saus khas China. Makanan seafood kerang yang paling terkenal adalah Oyster Nam Kee yang dimasak sederhana dengan cara dikukus bersama bumbu kemudian disajikan dengan kecap.
Tentunya menu sayuran selalu menjadi pilihan pengunjung, seperti tumisan aneka sayur (Mix Vegetable with Bean Curd) yang rasanya hampir sama dengan yang biasa kita temui di restoran China berkualitas tinggi di Jakarta.
Tersedia juga menu nasi goreng yang kadang dipilih sebagai pengganti nasi putih. Ada pula masakan bakmi dan bihun yang juga banyak dipesan pengunjungnya. Minuman favorit pengunjung tidak lain adalah teh China yang disajikan dengan cawan kecil dan poci khas China. Teh dapat dinikmati secara gratis.
Kesempurnaan rasa di semua makanan membuat pengunjung ingin memesan semua makanan yang ada. Oleh karena itu pengunjung selalu berkeinginan untuk datang kembali ke restoran keluarga yang sudah dijalankan oleh dua generasi ini.
Kesuksesan restoran tradisional di negeri orang ini seyogyanya bisa menjadi inspirasi pengelola restoran Indonesia di Belanda. Di Amsterdam cukup banyak restoran Indonesia.
